Backing up to tape means you are recovering your most critical data - data on your SAN - from tape in the event of a disaster. Even if you successfully recover your data from tapes, you may have lost 24 hours worth of data. The recovery time objective of recovering your SAN environment from tape could easily exceed 72 hours or longer.
